A delightful springtime treat, perfect for Easter or any occasion that calls for a touch of sweetness. The cake is baked in Nordic Ware’s Bunny Cakelet Pan, which gives each cake a charming, bunny-shaped design. The cakes are tender and slightly sweet, with the vanilla and honey offering a natural, comforting flavour. These little bunny-shaped cakes make a fun and festive dessert for gatherings or a special homemade gift.
Method
- Preheat oven to 176°C. Prepare bunny pan with butter and flour or baking spray. Set aside. In a medium bowl, whisk together flour, baking powder and salt. Set aside.
- In another bowl, combine milk, honey, lemon juice and vanilla bean seed. Set aside. In a stand mixer with a paddle attachment cream butter and sugar together. Add one egg at a time and blend thoroughly after each. Add half of the flour mixture, then half of the milk mixture. Blend completely before adding the other half of the flour and milk. Scrape the sides of the bowl and beat until fully incorporated. Pour evenly into the prepared bunny pan. Tap gently on the counter to remove bubbles.
- Bake for 25-30 minutes or until a toothpick inserted into the centre of the middle bunny comes out clean. Let cool for 10 minutes before inverting onto a cooling rack.
