This hearty vegetable tortellini soup is a comforting, one-pot meal packed with vibrant veggies, tender pasta, and rich tomato-herb flavour—perfect for cozy dinners with crusty bread on the side.
Method
- Heat oil in a large stockpot over medium-high heat.
- Add onion and sauté for 3 minutes. Add garlic and dried herbs and stir for 2 minutes.
- Add celery and zucchini and continue sautéing for 5 more minutes, stirring occasionally. Add the bay leaves
- Add tomato paste, tomatoes, water and stock and stir for 5 minutes. Add the canned beans. Bring the mixture to a simmer. Then reduce the heat to low, cover, and simmer for 10 minutes to bring together the flavours.
- Remove the lid, add the tortellini, broccoli and green beans and stir occasionally (making sure the tortellini is submerged in the liquid) for about 5 – 8 minutes. Add the chopped parsley and season well.
- Serve with crusty bread and butter.
