  • 1/2 cup butter, softened
  • 1 1/4 cups granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 2 cups cake flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup plain yogurt
  • 1/2 cup buttermilk
  • Glaze:
  • 1/4 cup lemon juice
  • 1 1/2 cups granulated sugar
  • 2 tablespoons corn syrup

Nordic Ware’s Lemon Anniversary Cakelets are a delightful combination of zesty lemon flavour and moist, tender cake. These mini cakes are perfectly sized for individual servings, offering a refreshing burst of citrus with every bite. The bright lemon flavour is balanced by a soft, airy texture, making them light and satisfying. Whether enjoyed with a cup of tea or as a sweet treat for any celebration, these cakelets bring a touch of elegance and a hint of tartness that makes them irresistibly delicious. Their delicate beauty and delicious flavour make them a perfect choice for special occasions or simply to brighten up your day.

Method

  1. Preheat oven to 175°C.
  2. Prepare a pan with baking spray with flour in it and use a pastry brush to evenly coat the details. You can also use Crisco/butter and flour the cavities.
  3. In a large bowl, blend butter and sugar on medium speed for 2 minutes, until light and fluffy.
  4. Add eggs, vanilla, lemon juice and lemon zest.
  5. Add remaining ingredients and blend on low speed, for 1 minute, scraping the bowl often.
  6. Beat on medium speed for 2 minutes, until well blended.
  7. Divide batter evenly among cavities, filling each only 3/4 full.
  8. Bake for 20-25 minutes, until a toothpick inserted comes out clean.
  9. Cool for 10 minutes in a pan. Invert onto a cooling rack and cool for 15 minutes. If there is leftover batter, clean the pan and repeat the steps.
  10. While the cakes are cooling, prepare the glaze.
  11. In a small saucepan, combine all glaze ingredients.
  12. Stir constantly over low heat until sugar dissolves, about 5 minutes.
  13. Remove from heat and let cool for 5 minutes.
  14. Brush glaze over cakes.

Makes 6+ cakelets.
