Nordic Ware’s Lemon Anniversary Cakelets are a delightful combination of zesty lemon flavour and moist, tender cake. These mini cakes are perfectly sized for individual servings, offering a refreshing burst of citrus with every bite. Method
- Preheat oven to 175°C.
- Prepare a pan with baking spray with flour in it and use a pastry brush to evenly coat the details. You can also use Crisco/butter and flour the cavities.
- In a large bowl, blend butter and sugar on medium speed for 2 minutes, until light and fluffy.
- Add eggs, vanilla, lemon juice and lemon zest.
- Add remaining ingredients and blend on low speed, for 1 minute, scraping the bowl often.
- Beat on medium speed for 2 minutes, until well blended.
- Divide batter evenly among cavities, filling each only 3/4 full.
- Bake for 20-25 minutes, until a toothpick inserted comes out clean.
- Cool for 10 minutes in a pan. Invert onto a cooling rack and cool for 15 minutes. If there is leftover batter, clean the pan and repeat the steps.
- While the cakes are cooling, prepare the glaze.
- In a small saucepan, combine all glaze ingredients.
- Stir constantly over low heat until sugar dissolves, about 5 minutes.
- Remove from heat and let cool for 5 minutes.
- Brush glaze over cakes.
Makes 6+ cakelets.
