A juicy, spiced fruit filling topped with a buttery coconut crunch—perfect for cozy nights or crowd-pleasing desserts.
Method
- Preheat the oven to 190°C (375°F). Grease 6 ramekins and place them on a baking tray.
- In a large saucepan, combine cherries, apples, sugar, flour, vanilla extract, and ground cinnamon.
- Place over a medium heat and stir until the fruits are evenly coated and start to soften.
- Transfer the mixture evenly to the prepared ramekins.
- In another bowl, mix flour, desiccated coconut, brown sugar, and salt.
- Add chilled diced butter and use your fingers to combine until crumbly.
- Sprinkle the coconut crumble mixture evenly over the fruit filling.
- Bake in the preheated oven for 15-20 minutes or until the top is golden brown and the filling is bubbly.
- Allow the crumble to cool slightly before serving.
Enjoy warm, optionally with a scoop of vanilla ice cream.
