A juicy, spiced fruit filling topped with a buttery coconut crunch—perfect for cozy nights or crowd-pleasing desserts.

Method

  1. Preheat the oven to 190°C (375°F). Grease 6 ramekins and place them on a baking tray.
  2. In a large saucepan, combine cherries, apples, sugar, flour, vanilla extract, and ground cinnamon.
  3. Place over a medium heat and stir until the fruits are evenly coated and start to soften.
  4. Transfer the mixture evenly to the prepared ramekins.
  5. In another bowl, mix flour, desiccated coconut, brown sugar, and salt.
  6. Add chilled diced butter and use your fingers to combine until crumbly.
  7. Sprinkle the coconut crumble mixture evenly over the fruit filling.
  8. Bake in the preheated oven for 15-20 minutes or until the top is golden brown and the filling is bubbly.
  9. Allow the crumble to cool slightly before serving.

Enjoy warm, optionally with a scoop of vanilla ice cream.
