Nordic Ware’s Carrot Cakelets are a delicious and moist treat that brings together the rich flavours of spiced carrot cake in a perfectly portioned, individual-sized form. Each cake is packed with tender grated carrots, warming spices like cinnamon and nutmeg, and a hint of sweetness, creating a comforting and flavorful bite.
Method
- Preheat oven to 175°C.
- Grease and flour pan.
- In a large bowl, beat together eggs, oil, sugar and vanilla.
- Mix in flour, baking soda, baking powder, salt and cinnamon, Â Stir in carrots.
- Pour half of the batter into prepared cavities.
- Bake 18-22 minutes until a toothpick inserted in the centre of the cake comes out clean.
- Cool for 10 minutes in a pan; invert cakes onto a cooling rack.
- Wash and prepare the pan again.
- Repeat the procedure with the remaining batter.
For Frosting:
- In a medium bowl, combine butter, cream cheese, confectioners sugar and vanilla extract.
- Place a dollop of frosting on top of each cake.
- Garnish with additional carrots and nuts, if desired.
Makes 24 cakes.
