  • Cake:
  • 4 eggs
  • 1 1/4 cups vegetable oil
  • 2 cups sugar
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons gound cinnamon
  • 3 cups grated carrots Cream Cheese
  • Frosting:
  • 1/4 cup butter, softened
  • 4 ounces cream cheese, softened
  • 2 cups confectioners’ sugar
  • 1 teaspoon vanilla extract

Nordic Ware’s Carrot Cakelets are a delicious and moist treat that brings together the rich flavours of spiced carrot cake in a perfectly portioned, individual-sized form. Each cake is packed with tender grated carrots, warming spices like cinnamon and nutmeg, and a hint of sweetness, creating a comforting and flavorful bite.

Method

  1. Preheat oven to 175°C.
  2. Grease and flour pan.
  3. In a large bowl, beat together eggs, oil, sugar and vanilla.
  4. Mix in flour, baking soda, baking powder, salt and cinnamon,  Stir in carrots.
  5. Pour half of the batter into prepared cavities.
  6. Bake 18-22 minutes until a toothpick inserted in the centre of the cake comes out clean.
  7. Cool for 10 minutes in a pan; invert cakes onto a cooling rack.
  8. Wash and prepare the pan again.
  9. Repeat the procedure with the remaining batter.

For Frosting:

  1. In a medium bowl, combine butter, cream cheese, confectioners sugar and vanilla extract.
  2. Place a dollop of frosting on top of each cake.
  3. Garnish with additional carrots and nuts, if desired.

Makes 24 cakes.
