INSTRUCTIONS:
- Preheat oven to 180°C. Place carrots on a baking tray and drizzle with oil. Roast for 1 hour, until soft and caramelised.
- When roasted, place in a high-speed blender along with maple syrup, spices, salt, vanilla extract, tahini and coconut oil. Blend until a roughly smooth paste (a few chunks is fine).
- Combine remaining ingredients in a bowl, and add carrot paste. Stir until evenly coated and distributed.
- Bake for 25-30 minutes, until cooked through. Don’t stir until the granola has cooled, otherwise you will not have clusters! When cooled, break the granola into clusters.
- Store in an airtight container.
