Carrot Cake Cluster Granola

  • 3 medium carrots, sliced into thirds
  • 1/4 cup maple syrup
  • 2 tsp mixed spice
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1 tbsp tahini
  • 1 1/2 tbsp coconut oil
  • 3/4 cup oats
  • 1/2 cup buckwheat
  • 1/2 cup almonds, chopped
  • 1/4 cup oat flour
  • 2 tbsp flaxseeds
  • 2 tbsp coconut flakes
  • 1/3 cup sultanas
  • 1/3 cup candied mixed peel
  • 1/4 cup crystallised ginger, chopped

INSTRUCTIONS:

  1. Preheat oven to 180°C. Place carrots on a baking tray and drizzle with oil. Roast for 1 hour, until soft and caramelised.
  2. When roasted, place in a high-speed blender along with maple syrup, spices, salt, vanilla extract, tahini and coconut oil. Blend until a roughly smooth paste (a few chunks is fine).
  3. Combine remaining ingredients in a bowl, and add carrot paste. Stir until evenly coated and distributed.
  4. Bake for 25-30 minutes, until cooked through. Don’t stir until the granola has cooled, otherwise you will not have clusters! When cooled, break the granola into clusters.
  5. Store in an airtight container.
