Daily Bake Stainless Steel Pudding Steamer 2L

Ingredients:

• 1 cup brown sugar
• 1 cup of butter (or lard)
• 1 cup of self-raising flour
• 1 cup of white breadcrumbs
• 1 teaspoon allspice
• 1 kg mixed dried fruit
• 4 large eggs
• 1 ½ tablespoons of plum jam (or other dark jam)
• 1 teaspoon baking soda
• 1 cup boiling water

Method:

1. Rub butter through the brown sugar, then add all other dry ingredients and mix well.
2. Beat eggs and add to dry ingredients with the jam, mix through
3. Add boiling water to baking soda and add to mixture, mix together until well combined.
4. Pack mixture into pudding tin. Put pudding tin into a large saucepan, add boiling water to the saucepan to surround the pudding tin, fill 3/4 the height of the pudding tin.
5. Boil for 4-5 hours, topping up water as needed. Allow to stand for 15 minutes, then tip out and serve with brandy custard.
