Most often, sheeters are used for laminated doughs such as croissants, Danish, and puff pastries. That said, the sheeter can be used with many different types of dough, such as cookie dough, pâte sucrée, pâte brisée, cracker dough, and even fondant and gum paste.
How much space do I need for the 12 in Compact Dough Sheeter?
When assembled, the sheeter is roughly 32.5 in L x 19 W x 8 H (82.5 x 41 x 20 cm). Extra space for the movement of the sheeter board is necessary on both sides. When the board is fully extended to one side, an additional 6 in (15 cm) is needed.
How much dough does the 12 in Compact Dough Sheeter accommodate?
The amount of dough depends on the final dimensions and thickness of your dough. The determining factor is the size of the sheeter board. The board is 27.5in long x 12 wide (60 x 30 cm). From our experience, a batch of croissant dough made with 300g of flour is close to the maximum capacity (with the butter block and dough block combined weighing about 675g total).
Can the sheeter board fold down for storage?
The sheeter boards do not fold down for storage. However, the boards are slim, lightweight, and easy to tuck away when not in use.
