Making Omelettes
Pre-heat both sides of the pan over a medium heat with butter or oil. Divide whisked egg mixture between the two sides of the pan. Cook slowly on low heat. Cook until the centres have set. Add desired ingredients to the pan side with handle. Fold omelette by gently closing the pan. Serve immediately.
Making Poached Eggs
Fill pan (handle side) with water and place over moderate heat and bring to boil. Do not let the pan boil dry! Season each poaching cup with butter or oil. Break one egg into each cup. Use the other half of the pan as a lid and close. Cook for approximately 4 minutes until the egg white is set but the yolk remains liquid. Invert eggs onto a serving plate. Serve immediately.
Caution: Open the lid with caution as steam may be released. Direct contact may result in severe burns.
